Torno Subito by Massimo Bottura
A contemporary journey to the Italian Riviera of the 60s led by the exuberant chef Massimo Bottura
Dubai has a reputation for attracting world-renowned chefs, so it was just a question of “when” for creative mastermind Massimo Bottura. When Bottura was approached by W Dubai – The Palm, though, opening another Osteria Francescana was nonsensical. According to the Michelin-starred chef, Dubai does not want fine dining, it wants to have fun, so instead he opened Torno Subito. A Michelin star in the Michelin Guide Dubai 2022.
The name, that can be translated in “be right back”, is a reference to a work by Italian artist Maurizio Cattelan, underlining how, for Bottura, art is an inspiration, a guide and a muse, here and for every one of his projects.
Funny, colorful and representative of an era that no longer exist, the décor was inspired by the atmosphere in Fellini’s films, like Amarcord, characterized by the carefree spirit of the Adriatic coast, recreated by combining pastel colors, beach-inspired wallpaper, vintage postcards hanging from the ceiling and a gelato cart.
The keys to the kitchen have been handed to one of Massimo’s most trusted and talented chefs, Bernardo Paladini. After 7 years in Modena at Osteria Francescana, Paladini brings to Dubai his culinary talent.
Dishes are grounded in tradition but jazzed-up with the same contemporary twists that Massimo Bottura is known for. Guests can choose from a selection of dishes that leads them through a journey throughout the Italian peninsula, from Tagliatelle al ragù (Bottura’s favorite) to Cacio E Pepe and pizza Regina Margherita, all prepared using genuine ingredients, mostly imported from Italy.
