The restaurant’s philosophy is fresh and seasonal ingredients. One example is its Piccione Viaggiatore, an authentic autumn trip to Italy, with pumpkin used in all its forms as the main ingredient of the dish, fresh endives, figs, and roast pigeon breast paired with foie gras.
